Summer Sides: Watermelon Salad with Halloumi, Basil and Lime

I combined two of my most loved ingredients into one totally refreshing, cool and flavorful side salad! The sweetness of the watermelon pairs perfectly with the saltiness of the halloumi and the lime and basil add some zing! This is the best kind of side for a barbecue--easy to throw together, and a light crisp balance for the other bbq fare!
Serves 4
Ingredients:
1 block halloumi cheese, thinly sliced
3 basil leaves
The juice of 1/2 lime
6 cups cubed watermelon
Step 1: Cut up the watermelon and chiffonade the basil leaves (roll them up and cut them perpendicular to the roll. Cut the lime in half.
Step 2: Heat a frying pan on medium heat for at least 1 minute, then add the 1 tablespoon olive oil and the slices of halloumi and fry on each side until they're golden browned and crispy.
Step 3: Combine the watermelon and halloumi, then squeeze in the lime and toss to combine. Top with the basil. Enjoy!
PS.This salad is delicious with Tajin sprinkled on top too!
